On-campus students typically have to manage their studies, time-limited assignments, and social activities. Good, easy, budget-friendly meals can therefore be a lifesaver at mealtimes. In Uganda, most hostels have common store cupboards, so we are going to provide recipes for 5 different dishes below that use ingredients that may already be in your cupboard.
1. Egg Fried Rice
Ingredients:
- Cooked rice, very cold
- Eggs – Random stir-fry vegetables (e.g. carrots, peas and onions)
- Soy sauce or seasoning of choice
Instructions:
- Heat a pan, add some oil, and pour in the eggs, stirring to scramble.
- Break the rules of stir-fry by slowly stirring the veggies until they are tender.
- Put in the cooked rice, stir in some soy sauce, let it heat through and through. Enjoy your hot meal!
2. Quick-Boil Noodles
Ingredients:
- Instant noodles
- Vegetables — (e.g. cabbage, carrots, bell pepper)
- Proteins such as shredded chicken or tofu,
- Soy sauce or your fave seasoning
Instructions:
- Boil noodles according to packet instructions, drain, and set to one side.
- Use your well-prepped pan to stir-fry tofu until brown.
- Add cooked noodles and spice mixture or soy sauce, stir until well combined. Serve hot.
3. Spaghetti With Tomato sauce
Ingredients:
- Spaghetti
- Tomato sauce
- Onions
- Garlic
- Spices (such as paprika or oregano)
- Optional: for an additional protein source, add minced meat and / or beans.
Instructions:
- Boil spaghetti according to package directions — this usually involves boiling it for 8 to 12 minutes.
- Once the spaghetti has cooked, pour out the water, and set the noodles to the side.
- After boiling the spaghetti, in a skillet, fry the onions with crushed garlic until they achieve a golden color.
- Following this, mix in crushed tomatoes and simmer until the sauce thickens. Add the boiled spaghetti to the resulting sauce and mix the ingredients well.
- Serve while hot. Note: Don’t neglect the to-go laundry spaghetti can provide.
- Additionally, you might even make it for breakfast pleasures too. Absolutely nothing more valuable or special than spaghetti-eating romance or nourishing yourselves that morning munchy!
4. Cornmeal Quick Porridge
Ingredients:
- Cornmeal or millet flour
- Water
- Sugar or honey (optional)
Instructions:
- In a saucepan, mix cornmeal or millet flour with water to form a smooth paste.
- Bring to a boil, stirring regularly to avoid lumps.
- Take the heat down to a simmer; add sugar or honey to taste while stirring frequently.
- Once porridge has thickened, remove from heat and serve.
5. Beans and Eggs Chapati
Ingredients: (1-2 servings)
- Chapati or roti
- Boiled beans
- Fried (scrambled) eggs
- Raw tomatoes and onions
- Optional: Avocado and whatever other garnishes you might desire.
Instructions:
Cooked to your taste or Toasted, Beans heat and season using turmeric saltridge and pepper, eggs fry or scramble, Assemble Chapati or Bread with beans, eggs together with sliced tomatoes, onions and other toppings of your preference. Enjoy as a hearty sandwich or as part of our leftover chapati wrap!
